Henderson's Meats and Abattoir is owned by Gillette farms which now consists of 4 senior partners, Marc, Louis, Vincent, and Mathieu Patenaude, and 4 junior partners, cousins, Eric, Amelia, Paul and Rachel.

 

In 2021, an opportunity arose to acquire our local processing plant from retiring couple Tom and Betty Henderson who had started Henderson Meats and Abattoir. Given that we were already one of their largest clients, it became a logical step for us to embrace this venture. This move seamlessly complemented our beef division, opening up new avenues and prospects for the generations that will follow. Furthermore, we were driven by the desire to ensure a sustainable future not only for ourselves but also for our fellow farmers in the region. By acquiring the processing plant, we aimed to provide a lasting solution for the processing needs of beef, pork, lamb and goat, ensuring that farmers in our community have a reliable facility for years to come. 

 

The Henderson name lives on through their son Jim Henderson who is our head butcher/général manager. And they can proudly say they are now on their 3rd generation operating the plant with their grandson Rylee being heavily involved in the day to day operations.

 

We are the only plant/butcher shop in the region that raises its own cattle, processes its own cattle, and sells directly to customers. Our clients can have faith and trust that they are getting the true farm to plate experience. We oversee the whole process from start to finish. We have perfected for you a premium product by selecting the right genetics, and raising the cattle right from the start, carefully finishing them to perfection! Our premium Angus beef is sold all over the region and has amazing reviews! It is also sold in 3 restaurants in the region.

Jim Henderson

GENERAL MANAGER

Jim Henderson is the son of former owner Tom Henderson. Jim has been cutting meat for over 30 years. He is considered one of the best in the business. Our customers come from far away to get their meat processed by him, and he has many dedicated customers who have been with him for years. He manages our great team of young butchers and staff.
